Bikini Recipe
Yields 10 people
Ingredients for the Clementine Syrup (makes 750ml)
300ml fresh clementine juice
200ml recently pressed lemon juice
500g fine sugar
To make the Drink (makes 850ml, to serve 10)
400ml premium vodka
100ml classic gin
150ml peach-flavored liqueur
200ml citrus syrup (as made above)
Fresh cranberries, for garnish
Mandarin essential oil, as a final touch
Method
To prepare the Syrup: Combine every components in a pot, heat until it reaches a light boil, mixing so the sugar melts. Next, remove from the heat and leave to cool down fully. Decant into a clean bottle, cap it keeping it in the fridge, where it will keep for up to a month.
For the Cocktail Base: Pour all the liquids into a big jug, let it rest for one hour, then strain preferably using a fine cloth, so it's completely strained.
To serve: Measure 85ml of the batch mix into a mixing glass packed with ice, gently stirring gently for about 60 seconds to cool it down. Pour to a chilled martini glass or similar, top with a few cranberries and complete it using a quick spritz of the essential oil over the top.
